This Rwanda Arabica Imigongo coffee has been decaffeinated using a technological advanced process that involves CO₂. It allows to extract only the caffeine from the coffee bean, preserving as much as possible the original aromas.
HOW DOES CO₂ MAKE A DIFFERENCE?
In particular pressure and temperature conditions the carbon dioxide (CO₂) acts on the caffeine present in the green coffee.
The CO₂ penetrates the bean structure and selectively binds to the caffeine, allowing for its removal without exposing the coffee to traditional organic decaffeination solvents.
And therein lies the value of the process: the caffeine is removed, but the character remains.
