Tasting this coffee, the nose is hit with notes of cocoa bean and chocolate, blended with the brightness of the ripe fruit. Delicate flavor, where the vibrant notes of the fruit mix with a unique complexity. The balanced taste offers hints of white and yellow peach, with notes of elderflowers, reminiscent of a sweet chamomile. Despite its sweetness, thanks to the washed process, this coffee presents both tannic, tartaric and a malic acidity that changes according to the different temperatures. The body is light and delicate. The aftertaste is persistent, leaving on the palate a long finish of chocolate and sweet fruit.

Santa Barbara Estate is a Colombian family-owned farm that produces and exports high quality coffee. Its origin traces back to the beginning of the 20th century with the figure of Don Alejandro Angel, one of the first big exporters of Colombian coffee. In the 1980s his nephew Pedro Echavarría started growing coffee in the Santa Barbara region (Antioquia), attracted by its ideal conditions: favourable microclimates, volcanic soils, perfect altitude. Today, Santa Barbara Estate comprises 5 adjacent farms, among which Agualinda, the higher one, famous for its many water sources and the amazing view on the Sabaletas Canyon. The coffee is processed in the wet mill La Joyeria, in order to guarantee traceability and quality. In the more recent years, the son of Pedro Echavarría, Pedro Jr., together with the director Leonardo Henao Triana, has been experimenting a lot with the goal of improving the coffee processing through technical rigor and passion for excellence.
