Etiopia Damo Sidama: tra sensualità fiorita e agrumi

Balsamico ed agrumato il suo aroma al naso, ma con una vivace sensazione di dolcezza che ricorderà appunto un mandarino maturo, dolce e succoso.
Il profumo cede poi spazio a note di fiori di capo e leggermente maltato. Il suo flavore è incantevolmente morbido dove prevale la raffinatezza e l'intensità di un'arancia sanguinella, litchi e la lavanda.
Sentori di agrumi maturi e scorzette candite lasciano al gusto un'ondata di freschezza. La sua acidità è magica e citrica e ben bilanciata.
La corposità è lieve, fluida e per questo la sensazione è quella di sorseggiare una tisana al bergamotto. Il retrogusto è davvero persistente, dove la nota di di lavanda e fiori misti rimane a lungo sul palato.
Il caffè Damo proviene dalla stazione di lavaggio Damo, nella regione etiope di Sidama. I produttori coltivano senza input chimici, ma affrontano gravi mancanze infrastrutturali e formative. Daye Bensa supporta la comunità con progetti per strade, elettricità e formazione agricola.
La lavorazione prevede selezione manuale, immersione in acqua e lenta essiccazione su letti rialzati.
L'essiccazione richiede 16–19 giorni prima della decorticazione e preparazione per l'esportazione.
Sidama è dal 2020 una regione autonoma; “Sidamo” è ora considerato un termine obsoleto.
Dal 2017 è possibile esportare caffè etiope con tracciabilità, superando i limiti imposti dall'ECX.
